Head Of Production

Our client is a large, independently owned, co-located brewery and distillery based in Ireland. They are looking to recruit a Head of Production who will have overall responsibility for both the brewery and distillery functions and will report directly to the Managing Director.

They are looking for someone with strong practical production experience who is capable of working credibly across both brewing and distilling. The individual does not necessarily need to be equally specialised in every discipline, but must be sufficiently experienced to take overall responsibility for the combined production function and to manage a small, hands-on team. Importantly, this is a hands-on, ‘in the trenches’ position.

Key responsibilities:
• Overall responsibility for brewing, distilling and cellar operations
• Production planning and scheduling across beer, gin and whiskey
• Developing and maintaining recipes, operating procedures and quality standards
• Supervising fermentation, distillation, spirit cuts, maturation and cask filling
• Responsibility for product quality, traceability, food safety and production compliance
• Oversight of excise records, production records and stock reconciliation
• Managing raw materials, production consumables and packaging requirements
• Coordinating planned and reactive maintenance with equipment manufacturers and specialist contractors
• Managing production safety, including chemical handling, steam systems, DSEAR/ATEX controls and permit procedures
• Training, supervising and developing the two Brewing and Distilling Leads
• Supporting future production growth and identifying when additional staffing or capability is required
