Distilling Lead

Our client is a large, independently owned, co-located brewery and distillery based in Ireland. They are looking to recruit a Distilling Lead who will work in the distillery and support the brewery and would be expected to become fully cross-trained, ultimately supporting the full production operation. The Distilling Lead will be technically capable, with meaningful distilling and cellar experience, hands-on and comfortable working with a high degree of independence once trained on the site and its equipment.

Key responsibilities will include:
• Operating brewing, fermentation, distillation and transfer equipment
• Monitoring automated production systems and responding appropriately to alarms or process deviations
• Preparing raw materials and production equipment
• Carrying out cellar operations, including fermentation monitoring, tank transfers and carbonation
• Washing, inspecting, filling and handling kegs
• Supporting gin and whiskey distillation under approved procedures
• Assisting with spirit receiving, cask preparation, cask filling and warehouse movements
• Completing cleaning and CIP procedures
• Taking samples and carrying out routine production and quality checks
• Maintaining accurate batch, cleaning, stock and traceability records
• Carrying out routine equipment checks and basic first-line maintenance
• Receiving and moving raw materials, chemicals, packaging and finished stock
• Supporting safe contractor access and maintenance activities
• Working flexibly across brewery, distillery, and kegging operations
